On May 6th, 10 sophomores had the opportunity to tour, interview staff, and have lunch at 4-star restaurant “The Tortoise Club.” The students received a first-hand view of the inner workings of a top restaurant operation from beginning until mid-lunch. Part owner/Manager Megan Addington gave the students the complete agenda and led them around the property. Clemente students then attended a morning staff meeting and were assigned to a staff member to guide them in using skills in a real-life working situation. All the students worked right into the lunch rush and were asked to do more and more tasks as they grew comfortable in the commercial kitchen. Their work ranged from planning and preparing the restaurant to greeting and serving guests.
